Chickpea pizza
This pizza I made with the hummus from my previous post is a classic staple in my home and awesome to pile all your leftovers onto. It’s also crazy filling and so, so nutritious as well as low in carbs and super high in protein. I’ll generally use this recipe from epicurean.com and pile on whatever I have in the fridge: sauces, vegetables, nuts, herbs, etc… This time I used the hummus with some peppers added, broiled tomatoes + potatoes, zucchini and an almond meal “parm” from homemade almond milk with some herbs, salt + pepper added. Another I’ve fed to many meat eaters who left happily rubbing their full bellies.
